Basic Muffin Recipe (by Jennifer)
. 2 cups all-purpose flour
. 1/2 cup sugar
. 1 Tbsp. baking powder
. 1/2 tsp. salt
. 1 egg
. 3/4 cup milk (I have been substituting coconut milk)
. 1/3 cup vegetable oil
Combine the dry ingredients. In a large mixing bowl, beat the egg, milk, and oil. Dump in the dry ingredients and stir just until moistened. At this point you ONE of your flavors.
. 1/2 cup chocolate chips
. 3/4 cup blueberries + 1 Tbsp. lemon juice (I used 1 tsp. lemon oil)
. 1/2 cups raisins or dried apples + 1 tsp. cinnamon
. 4oz. applesauce in place of the egg
. substitute whole wheat (1:3 ratio) - you will need to increase the amount of milk to get the right consistency
. add some wheat germ - you will need to increase the amount of milk to get the right consistency
Once you have added your flavor, fill greased or paper-lined muffin cups 3/4 full and bake and 400 for 18 - 20 min. You can also adapt this for use in a loaf pan and bake at 400 for 45 - 50 min. ENJOY!!! Save money by avoiding prepackaged items or processed breakfast food/snacks AND there are no additives or preservatives in these:)

Fajita Seasoning Mix
. 3 Tbsp. cornstarch
. 2 Tbsp. chili powder
. 1 Tbsp. salt
. 1 Tbsp. paprika
. 1 Tbsp. sugar
. 2 1/2 tsp. crushed chicken bouillon cube
. 2 1/2 tsp. onion powder
. 1/2 tsp. garlic powder
. 1/2 tsp. cayenne (I use a dash)
. 1/4 tsp. crushed red pepper flakes (I use none)
. 1/2 tsp. cumin

Blackened Seasoning for fish (or chicken)
. 2 tsp. ground paprika
. 4 tsp. dried leaf thyme
. 2 tsp. onion powder
. 2 tsp. garlic powder
. 1 Tbsp. granulated sugar
. 2 tsp. salt
. 2 tsp black pepper
. 1 tsp cayenne pepper, or to your taste (I use a very small sprinkle)
. 3/4 tsp. ground cumin
. 1/2 tsp. ground nutmeg (do NOT skip this one)
Preparation:
Place all ingredients in a container and store in a cool dark place. Shake it well before each use.

I often find recipes online. I give them a whirl and then take a family vote: TOSS or SAVE???
However, I often lose these recipes or forget the changes I made in the original that made it a family favorite.
